Say if i want to buy Red Dead Redemption (full game, NOT TRIAL), would i be able to buy it and download it on my built-in memory on the ps3 without any disks? (and with Playstation Plus, can you get a discount)
Yes you can buy full games. Not all disc games are available for download there so check first.
Playstation Plus does give you a discount... BUT...not on every game, they choose certain games and change them every month. Some are 20% off and some are 50%...but they choose the games that are discounted and only a few of them are.
Also the games you buy are stored in the PSN in your account history so if your system ever crashes (or you buy a new PS3) you can download them again for free, forever.
